Cake Recipe
Our favourite Cake Recipe is an all time classic, and very simple - Quick Mix Chocolate Cake. Not only is it easy to make, it tastes fantastic. Even if you are a novice, this Cake Recipe is a great place to start as it is a quick-mix cake, meaning that all the ingredients can be mixed together in one bowl.

Quick Mix Chocolate Cake
Cake Recipe Ingredients:
185g (6.5 oz) butter, softened
1 teaspoon vanilla extract
1 ¾ cups castor sugar
3 eggs (59-60g)
2 cups self-raising flour
2/3 cup cocoa
1 cup water
Cake Recipe Method:
Before starting the Cake Recipe, grease and line a deep 20cm cake pan.
Combine all ingredients in a large bowl and beat with electric mixer on low speed until combined. Increase speed to medium and continue beating until mixture is smooth and changed to a paler colour (approximately 3-4 minutes). Spoon into prepared pan.
Bake in moderate oven (180C/350F) for about 1 ½ hours. While the cake is cooking, make the icing. To test if cake is cooked, insert a skewer into the thickest part of the cake. If it comes out clean (no uncooked mix coating it), then it is done. Stand 5 minutes then turn and cool on wire rack. Spread cold cake with icing.
Chocolate Icing
Icing Ingredients:
90g dark chocolate, chopped
30g butter, softened
1 cup icing sugar, sifted
Hot water
Icing Method:
Melt chocolate and butter in bowl over hot water and stir to mix. Add icing sugar slowly and stir gently to mix. Add enough hot water to make the icing a spreadable consistency.
Now you’ve made the Cake Recipe, the top can be decorated as required. Some ideas include hundreds and thousands (for the kids), chocolate quills, white chocolate drops, candy flowers and glace fruits. This Cake Recipe is ideal for every day as well as special occasions such as birthdays.
